Xylitol, the so-called birch sugar, is a substitute for conventional sugar. Compared to sugar, however, this product is much healthier as it has almost half the calories and a much lower so-called glycemic index (8-12 times), making it safe for diabetics. During digestion, it leads to an alkaline reaction and is therefore recommended for older people at risk of osteoporosis. It can be used to sweeten drinks and various culinary products.

Xylitol is used for good reason as a natural substitute for white sugar. It looks almost identical and is just as sweet as sucrose. However, it has the advantage of containing significantly fewer calories - about 40% less - and its glycemic index (GI) is unusually 14 times lower than that of sucrose. This means that blood sugar and insulin levels rise very slowly and without sudden spikes after consumption. For this reason, it is recommended for diabetics and people who want to lose weight.
