Originating from Asian cuisine, tofu has been a staple in our kitchens for many seasons and, interestingly, is popular not only among vegetarians. It's a versatile product, rich in valuable nutrients and an excellent source of protein, calcium, and phosphorus. Tofu not only replaces meat in vegetarian dishes but also makes an excellent ingredient in sweet desserts. It's perfect for making a vegan version of cheesecake or tiramisu, namely tofunik and tofumisu. Its tender texture and ability to absorb flavors make it an irreplaceable ingredient in both classic and experimental dishes, winning the hearts of lovers of plant-based cuisine.

Vegan Tiramisu or Tofumisu

The traditional version of tiramisu consists of mascarpone, sponge cake soaked in coffee and amaretto, egg yolks, and sugar. For this vegan tiramisu, we replace the mascarpone with tofu and the egg yolks with cashews.

Ingredients:

  • long sponge cakes - 25 pieces,
  • Cashew nuts - 150 g,
  • Natural tofu - 2 cubes,
  • Espresso -100 ml,
  • Amaretto - 100 ml,
  • Soy drink - 200 ml,
  • Juice of half a lemon,
  • Maple syrup 100 ml,
  • Coconut oil - 15 g
  • vanilla pod,
  • dark cocoa.

Pour hot water over the cashews, let them stand for at least an hour, preferably overnight, and then, once they have swelled, drain the remaining water. Mix the coffee with the amaretto. Pour lemon juice over the shredded tofu. Then, mix the cashews with maple syrup until a smooth paste forms, add the soy milk, and blend again.

Add tofu to the prepared paste and mix everything together. Finally, add vanilla and coconut oil . The resulting mixture should be smooth.

Place the amaretto and biscuits in the bottom of a 21x21 cm pan. Simply dip them in for a maximum of 2 seconds. Then pour half of the mixture onto the sponge cakes, then another layer of sponge cake on top, and then the rest of the mixture.

The dessert is almost ready. Cover and refrigerate overnight. The tofumisu will firm up. Just before serving, sprinkle the cake with cocoa.

Tofurnik – vegan cheesecake

Tofurnik is a classic vegan dessert. Here's the recipe for the basic version.

Ingredients:

  • Natural tofu - 700 g,
  • Vanilla pudding - 2 pcs.,
  • Coconut milk - 400 ml,
  • Cane sugar - 3/4 cup,
  • lemon juice ,
  • lemon peel,
  • vanilla pod,
  • Coconut flakes – about 6 tablespoons,
  • Baking powder - teaspoon,
  • Cookies - 400 g,
  • 4-5 tablespoons coconut oil – 4 tablespoons

First, crush the cookies into sand, then add 2 tablespoons of coconut flakes and coconut oil and mix thoroughly. Place the prepared mixture on a baking sheet lined with parchment paper, up to 24 cm in diameter. While you prepare the remaining dough, place the baking sheet with the cookie dough in the freezer.

Drain the tofu, crumble it, and pour it into a bowl. Add the lemon juice and grated zest, and mix until smooth and even. Then add the coconut milk, sugar, vanilla, pudding mix, and baking powder to the mixture. Mix again until smooth. Then add 4 tablespoons of flaked coconut and mix gently. Pour the prepared mixture onto the cookie dough.

Bake the cake in an oven preheated to 180 degrees Celsius for about one hour. The cooled tofu cake can be drizzle with melted chocolate and sprinkled with coconut flakes or decorated with fruit, such as raspberries or blueberries.

Sweet vegan mousse without baking

This is a delicious sweet and, above all, very easy-to-prepare dessert that requires no baking. Vegan Chocolate Mousse with Tofu:

Ingredients for the mousse:

  • Natural tofu - 180 g,
  • dried dates -150 g,
  • dark chocolate - 100 g,

Ingredients for decoration:

  • 80 g coconut cream - 80 g,
  • Coconut or chocolate pieces,
  • vanilla pod,
  • Xylitol - about 0.5 teaspoon

First, pour boiling water over the dried dates and let them steep for about half an hour. After this time, discard the water. The chocolate should be melted. Stir the tofu and dates until smooth, add the melted chocolate, and stir again. Pour the mixture into mugs and let it rest in the refrigerator for at least an hour. The dessert can be decorated with whipped coconut cream, vanilla seeds, xylitol , and wood shavings.

In addition to exquisite desserts, tofu is also an excellent ingredient in more everyday sweet treats, such as pancakes with sweet cottage cheese. Its neutral flavor allows for creative experimentation in the kitchen while enriching the diet with valuable ingredients.
